Fresh Pasta: Recipe of the Month

When was the last time you had fresh pasta? The difference between fresh and dried pasta is incredible. Sometimes pasta plays second fiddle to the sauce, and that’s a shame. A great, fresh pasta has a satisfying, chewy texture and it can be the star of the plate with only a little bit of sauce.

Thanks to Lexington Pasta, we can serve fresh pasta daily on our seasonal menu. However, you may be surprised how easy it is to make your own at home.

Tips: It helps to have a pasta roller, but I’ve done it myself with just an old-fashioned rolling pin. It’s not a delicate dough, so prepere to build muscles as you knead it by hand. You can’t over-knead it so don’t worry. Just keep working it until it’s nice and smooth and elastic.
