Fresh pesto concentrates all the fresh flavor of your garden into a delicious paste you can use as a sauce or spread. Plus, it can be made at home in a jiffy.
Blanching the basil before pulverizing helps the pesto stay bright and green. We use toasted walnuts for this version, but you can substitute pine nuts, or try your favorite nut. Use our previous free recipes for fresh pasta and ricotta to make home made ravioli, then dress it with pesto for a light and incredibly fresh dinner.
